Since you have about 10 hours, here is how you could play this trip:

11:00: Land. Take the Prestia e Comandè bus (50 mins, around €6) or a shared taxi straight to Politeama.

12:30: Walk down Via Maqueda. Stop at Mercato del Capo for street food. You must eat Pane con la Milza (spleen sandwich) or Sfincione (Palermo pizza) to make the trip count.

14:00: Go to the Catacombs of the Capuchins (Catacombe dei Cappuccini). It’s an underground library of 8,000 mummified bodies dressed in their Sunday best.

16:00: Head to the Quattro Canti (the four corners) and the Cathedral.

18:00: Aperitivo at the La Vucciria market.

19:30: Bus/Taxi back to the airport.
