I went to Santorini last year in the 'off season' and here's why I'd recommend it; the prices were so much cheaper than summer. The crowds are way less in the tourist spots, so you can actually get a good sunset spot in Oia. You don't have to pre-book restaurants weeks in advance, I could get into most places as a walk-in.
Yes, the temps were a bit cooler, but I still had 20C+ every day, with some wind.
